I was in Vancouver this week and picked up an order of exotic Chilian Sea Bass (tooth fish) fillets for a friend. I had Chilian Sea Bass once in Maui at Momma's Fish House and it was great and very mild flavor and soft texture but a 4oz meal was very expensive. I guess it is not easy to find a fish monger who sells it because it is highly regulated and caught at 1000ft to 12,000ft deep and at the Antarctica shelf.
I picked up at Longliner Sea Foods and I just about dropped dead when I paid for 5.7kg $898.. He gave me a fillet to try ($89) and it is for dinner tonight.
