Ceviche recipes?

My favorite is black rockfish but have used ling cod. Just not as firm.
Chopped jalapeño onion and deseeded Roma tomatoes. Corn. I grill a cob and shave it off. Chopped raw fish. Cilantro and a little salt. Juice from at least half a dozen limes. Let sit for an hour before serving. I use scoops tortilla chips.
 
I like to add in some orange juice with the lime. It adds a bit of sweetness as the lime can be quite tart. Also some fruit like mango can be a nice contrast. I vary it a bit every time. Generally I try to get some sweet elements as well as some crunchy so it's not all soft. Corn nuts on top are popular. Also avocado adds a nice buttery fattiness. Just experiment and taste as you are mixing. Hard to go wrong if you are tasting as you go.
 
Thanks. The basic ingredients and the marinade shall we call it is what I am mostly looking for. Sounds like if I make Pico de gallo and add fish, lots of lime juice, couple table spoons of vinegar, dash of wine and some olive oil... I would be in business?

Yes, but no. When I make it ill do a mix of mostly vinegar with a few limes, no salt. Do just the fish in that until it's at the "doneness" you want. Then drain that off and mix in your other ingredients with fresh lime and a bunch of cilantro. My top secret trick is to throw a little chili powder on top for both flavor and presentation
