Years ago my wife and I would order spinach salad with warm bacon dressing in restaurants and enjoyed it. I never see it anymore. I tried a number of recipes and this is the best and really easy.
Torn up baby spinach leaves sprinkled with crisp bacon pieces and with this added
Warm Bacon Dressing
2T bacon fat
2T red wind vinegar
2t sugar
1 t Dijon mustard
pinch black pepper
Add all together and stir as bacon fat melts. serve warm over the spinach
