Storage of smoked salmon

New to smoking, given a Little Chief for Father’s Day this year.

Question: after brining and smoking (14hr brine and 10-18 hr smoke) how do you guys store smoked salmon after vacuum sealing?

Can it be room temperature like you see at some gift shops?
Or should it be frozen until used?

I do salmon on my treager on smoke but only for about 6 hours. Good for a week in the fridge but I usually vaccu pac and freeze the next day or 2.
 
I vacuum pack and freeze. Once thawed I like to eat within a week. Probably could last longer but I like a moist smoked fish and don't like to take chances.
I tried canning (jars) so I would not have to thaw but found it over cooked the fish and changed the flavor.
