So Im taking my old man (who lives in Ontario) up to winter harbour in August, and I'd like for him to be able to go home with his haul of the fish. Does anyone have any tips/info for getting fish (and keeping it frozen) across the country?

I have taken fish caught in Winter Harbour and Campbell River to Halifax with no problems.
Flash frozen, vacuum packed and placed in a foam cooler, worked great, still hard as a rock 11 hours later.
 
How big of a haul of fish? There are specially made boxes for this purpose; they are waxed, sturdy & hold 50 lb (weight limit for airline packages). If you were to stop into St Jeans in Campbell River, they would portion, package/vacuum seal & ship it - call them. Otherwise you could DYI & buy your own boxes & he could check it as baggage. Foam cooler works too; just be sure total load is 50lb or under (call specific airline to be sure)
 
Call Hardy Bouys Smoked Fish in Port Hardy, this is what they do. They can have it all custom cut, vac sealed, frozen and boxed up ready to travel home. They get it plane ready, keep it under 50lbs per box so no over weight charges, just like checking a piece of luggage if you are flying.

Make sure you have a waxed cardboard on the outside of the styrofoam box. Some airlines will not let you use just styrofoam.
 
If you do use Hardy Buoys they do all of this for you, they will ask you whether you want it "air ready" or "road ready" and they pack accordingly to what you need.
