Wow. They are better than I imagined. Small 60 gram cans with 5 to 6 small perfectly smoked oysters in their own delicious nectar. Juicy, tender, and full of flavor. Not tough or dense like the canned smoked oysters we get in the stores here that are from overseas.

They are pricey but for a treat they are a worth while indulgence.

I tried to reach out to Sawmill Bay, very very difficult to do so.

I gave up trying and ordered my oysters from St. Jeans.

I haven’t eaten imported oysters in over 25-30 years now

Steve the owner has been awesome replying to every message I send. He phoned me, emailed me, and texted me. Ordered another order this morning and he messaged me he was gonna ship it out the same day. Canada Post is on strike so he messaged me again to let me know he would personally drive my order to a courier company to ensure it got shipped. And the last order I put in was during the bad storm and they had no power and he still let me know he was gonna get that order out too. Nothing but a great experience from my end. He then contacted me back to ask if I could supply them with Big Leaf Maple Syrup to use in one of their new recipes they are working on for sweet chili smoked oysters.

If you are on the lower mainland hit me up a message and you can buy from me. I am a registered re seller of their products now and when I move to the island in March I will still sell them over there. That's how much I love their product lol.

I grabbed some of these from Paul last week. Far and away a better product than I've ever had. They are pricey, but well worth it for a nice treat. I've been bringing them to every Christmas party we've attended and the sentiment is unanimous.

Noro is killed at 90 degrees. I'm assuming the process of smoking and canning makes it a non issue

Bottle of Chinese cooking wine, cup of low sodium soy sauce, garlic powder, pepper and some onion powder to taste, oysters and their juice. Marinade 24-36 hrs. Smoke low til you like them, cool and toss lightly in olive oil. You’ll never go back. You can vac seal and freeze these and they won’t turn mushy.

Bottle of Chinese cooking wine, cup of low sodium soy sauce, garlic powder, pepper and some onion powder to taste, oysters and their juice. Marinade 24-36 hrs. Smoke low til you like them, cool and toss lightly in olive oil. You’ll never go back. You can vac seal and freeze these and they won’t turn mushy.

That sounds like a great marinade. When I make my first batch I'm gonna do a few different marinades to try out and yours will for sure be one of them. When I do I'll make a post on the forum showing how it goes.

Met with Paul and picked up a few cans of Sawmills Bay oysters. My wife and I tried the 1st can and loved them. Shared some with Holiday family guests (wife didn't want to share many). Everyone was impressed with the local quality. I will be trying the home smoke recipe for oysters when I can get some sans contagion!

Looks like Sawmill have pre breaded frozen oysters as well. I love the smoked ones. On 3-4 oysters per tin so one doesn’t have to share the can.

They do have breaded ones i picked up some tried from frozen and then thawed out with butter in the pan tasty smoked ones haven’t tried the spicy ones
