if it is hot [done in little chief about 8 hrs]you will find it will go moldly [2 weeks] best to freeze it in the freezer bags. have also canned in jars same as doing fresh salmon will last for years,for salmon balls etc. will last alittle more then 2 weeks,a cold smoke with long tunnel from smoker will last a lot longer[like a beef jerky] good luck.
