Marinated Spring Salmon in Hoisin sauce, ginger, garlic, sage, dill and cilantro basil for 2 hrs then poached the salmon (only cooking half way done cause will finish cooking in the oven in the pies) in water, white wine, onion, citrus spices and fresh herbs.
Boiled nugget potatoes with sweet potatoes then mashed with butter, sour cream, fresh dill, roasted garlic, sea salt and cracked black pepper.
Mixed the half cooked Salmon with the mashed potato mixture.
Spray inside of ramekins with non stick oil spray then lined ramekins with puff pastry dough. Fill the ramekins with salmon/potato mixture.
Cover ramekins with puff pastry dough. Pinching the cover dough to the dough in the ramekin making them seal together. Egg wash the puff pastry and cut a vent hole in top of puff pastry dough so cooking steam can escape while cooking.
Bake in 350 F oven for approx 20 min or until pastry is golden brown.
Great winter comfort food. My daughters loved it. Wife not much of a salmon eater.
