Paprika and Chipotle powder are the two spices I use the most. After growing all kinds of different peppers over the years from countries all over the world I thought it was about time to make my own home made Paprika. I smoked some of the peppers and kept others the way they are so that I would get a more complex flavor from this Paprika. There is a mix of peppers but the two types that I included more of were Mexican and Spanish peppers. The mix of peppers has sweet, mildly spicy and a few medium spice peppers.
I couldn't wait to try it after grinding it up and It's unbelievable. Everything I hoped for. Sweet, smokey with the Mexican and Spanish pepper flavors shining through like I hoped they would. Only a slight heat on the back end but very subtle. It will go so great in so many dishes.
I will for sure be growing the same varieties next year. It feels so good growing my own food and making my own spices with them. Store bought Paprika doesn't even come close.
Saved some of the pepper flakes to jar up too so I don't have to buy store bought of those either.
