Jigged up about 3 dozen large fresh herring around indian arm today while we waited for the traps to soak. Just wondering what the most effective way of freezing and storing these would be to gain the best product come time to use them.

here is a link that covers various methods folks you. cuba libre has some good ideas to processing the herring. I just layer some course salt in a bowl then some herring side by side on top of the salt, more salt, then another layer of herring and finally a top covering of salt. Put it in the fridge for 2-3 days, take out the herring, and place herring side by side in large ziplock bag and freeze them. Use them as you need them.
