It's unanimous in the household: Dad's first Halibut for Easter dinner! I'm down for that.

My Son - piano player/budding chef - agrees to cook it. I veg-out and start quaffing cold ones about 4:30.

Son gets involved writing a song; forgets about cooking dinner. So I decide to let him have his 'creative-moment' and prep the hali myself over another cold one.

Already had it skinned and fileted into nice portions. Wasn't sure what to do so I quaffed another beer then decided just to brush on some olive-oil and spices and hucked the pecker into the overn @ 400' for 15 - 20 mins.

Barbequed asparagus, fried perogies and WHAM-O - it's a 'hali-heaven' meal of the century!

I'm sittin' there munchin' on this stuff trying to wonder when the last time I had any was; couldn't remember so I figured it must have been a while. Likely in some restaurant somewhere after paying $25-bucks or more for an overcooked hockey-puck sized piece.

After everyone excused themselves - with many accolades over the wonderful fish - I decided WTF, I'm having another hunk.

Went back to the stove and grabbed another 1/2 pound or so hunk and had at er'... while I thought about how big the next one would be?

Fisherman's prerogative!
 
Great read! Glad it turned out to be a success for you! Hard to beat fresh fish that has been cooked right.
