Fish & Chips ???????/

Here’s a couple that I have used. The first one I got from a restaurant in Masset, the second one I seen on Cooper’s Nice Fish. I prefer the 1st one; I usually cut the recipe in ½ unless you’re cooking a pile of fish.

#1

4cups flour
3 capfuls of canola oil
4tsp sugar
2 oz vinegar
3 tsp salt
1 egg
8 tsp baking powder
4 cups cold water

#2

2 cups flour
½ tsp pepper
1 ½ tsp baking powder
2 eggs
1 tsp salt
12 oz’s Beer
 
Quick and easy. This one never lets me down.

Put some aunt jemima pancake batter in a bowl and add some beer. Makes a light and crispy batter. Pretty hard to mess up.

Besides the beer trick, try adding some Vodka. The alchol evaporates in the frying process and makes the batter even lighter than if you only used beer. SS
 
Brodies XXX self rising cake flour. Add beer.
Make it thin enough that if you dip your finger in it just coats it.

Just learned about this last year. Makes a very light batter which is what I like.

Thanks for the posts. Interesting that the only one that does not call for some kind of alcohol was from Merrit;)
