Canning Herring?

Anyone pressure can herring? Anything different than canning salmon?

Do I need to descale the herring?

I was thinking about doing a brine, smoke, can. Possibly adding oil to can.

Hopefully to end up with something like in this post

I've been eating a lot of canned sardines/sprats lately

Especially loving these little wolski sprats sold at walmart.

I wondered the same thing the last time the herring sale came through. I think I tried salting and grilling some and got turned off though.
 
Dutchman who loved his roll mops! To me , it's always been bait! Lol
I probally would de scale if canning scales are gross but if your willing to eat herring hhhmmmmm uuuuummmm. when canning dont be afraid of adding a gatlic clove and a spring of dill while its canning defintate game changer IMO.

YES but for some people they like herring ewwww ever see that stuff the let sit for months and months over in norway I think , watched chef ramsay puke his guts out trying it...I guess like scotch its a aquired taste and I have not aquired it LOL LOL
