Your call, I eat the whole thing even on clams bigger than that. The most important thing is letting them purge all of the grit out. Dip in lemon/ garlic butter and eat away. or open on grill, add cheese and hot sauce and a squeeze of lemon and eat away ........................ its all personal taste.
As long as butter clams are open in your area ?
butter clams do not filter toxins the same as manila and littlenecks
and some area's are closed to harvesting them.
